SATAY LONG BEAN

may your long bean never be boring again

Local Fijian Long bean made with coconut peanut butter - Island Style . topped with bongo chilli

Ingredients

  • 2 heap local long bean

  • 1/4 cup light soy sauce

  • 2 heaped tablespoons Island Style Smooth Peanut Butter

  • 1 table spoon honey or coconut nectar

  • 2 teaspoons rice wine vinegar

  • 2 teaspoons seasame oil

  • 1 clove garlic grated

  • 1 teaspoon miso paste

  • pinch black pepper

  • Table spoon boiling water, if needed

  • Fresh chilli to taste



DIRECTIONS

To make the sauce, mix all ingredients (except beans, water and chilli) in an bowl and wisk together. Add small amounts of boiling water if you prefer a thinner sauce.

Set aside.

Prepare the green beans, trim ends and cut into 4 inch lenghts.

Blanch beans. Place cut beans into boiling water for no more than 2 minutes. Transfer into strainer and run under cold water.

Fry lightly over medium heat in a small amount of oil.

Keep crispy!

Turn heat down and stir through sauce.

Sprinkle with fresh chilli.
