Peanut Butter Protein Balls

The great thing about making your own protein balls is you can use whatever you have in your cupboard. Top tip: it’s about the texture.

Try this for a roundabout recipe:

INGREDIENTS:

  • 3 cups / 90g of your favourite protein powder (you can also sub with coconut flour or Friends of Fiji Fine Coconut works a treat; you may not need much coconut oil!)

  • 1 cup Island Style Peanut Butter - CRUNCHY.

  • 1 cup steel cut oats - soaked for 10 min and drained thoroughly

  • 2 to 3 tablespoon of your favourite seeds - think pumpkin, flax, chia, or chopped crushed nuts.

  • 1 tablespoon coconut oil

  • 1 to 2 tablespoon of liquid sweetener try honey, maple, coconut nectar – optional, your protein powder may be sweet enough.

  • 100g Dark Chocolate – optional but highly recommended.


DIRECTIONS:


Mix all dry ingredients in a bowl. Add sweetener if using.


Add coconut oil in small amounts until mixture begins to come together.


Remember don’t let your mixture become too wet!

Roll into balls.

Melt 100g dark chocolate gently in the microwave. Drizzle over balls.

Store in an airtight container in the freezer.
